Nothing short of amazing! My Mom ordered these custom "bride" and "groom" 8 in. rounds and an additional two square cakes for our wedding shower. I picked them up on an extremely busy day (Saturday) while there was a market going on that morning. The line was out the door and nearly on the street. I had no idea this place was so popular! The staff was incredibly helpful to us getting all four (4) cakes for our event that afternoon with clear instructions to make sure they stayed in great condition beforehand.
Our friends and family just LOVED them. The flavor pairings are incredible and the cake itself is so moist. We couldn't be happier - beautifully decorated. I even have froze part of the cake to enjoy after our wedding to enjoy since we're going non-traditional. Thank you to everyone at Edelweiss Bakery for making our day special.

They're no Patisserie 46 but, imo, they can definately hold their own which is saying a lot. The quaint atmosphere and welcoming vibes make this the perfect spot for a quick sugar and caffeine fix any time of the day. I did not try their lunch sandwiches and their breakfast sandwiches were alright but their danishes and almond croissants were perfectly flaky, tasty, and hit the spot.
Their opera cakes were also perfectly balanced. With an enticing selection of other desserts and donuts, it is surely worth the stop. **Edit: I stopped by to try more goodies. Their lunch panini sandwich was okay but their little cakes were SO stinkin tasty and not overly sweet.

Very disappointed. We've been hearing about Edelweiss Bakery for some time. We're bakery lovers, and are fortunate to have a few favorite spots around the Twin Cities. This was a bit of a drive for us, and we were really looking forward to it. Heck, we'll even drive to Tobies, in Hinkley, for great cinnamon rolls. we love exploring new places (that are new for us), and supporting local businesses.
First impressions matter. Upon walking in, immediately noticed this was a really nice and bright looking place. Five young ladies "working" behind the counter, however, were more interested in talking about their week at high school than serving customers. Given the long drive, we ordered a few different things to make our journey worth it (in all, our order consisted of 4 cinnamon rolls, a ham and cheese croissant, 4 old fashioned donuts, and 2 chocolate glazed donuts).
A bit overpriced, and a bit underwhelming. for example, the croissant had no cheese. Still left a generous cash tip. I only mention this because it's the first time in my life I actually regretted tipping well. The girl who took my order forgot to add the two chocolate glazed donuts to my box. Noticed halfway home, but they weren't worth going back for. and, realized perhaps she simply missed it; thus, not a big deal. Jerry's bakery, in Edina, has far better donuts and cinnamon rolls for a fraction of the cost, and they're friendly. Disappointing that a grocery store (Jerry's, and even Byerly's for that matter) has better baked goods than Edelweiss Bakery.

First off, this was the first time I've been here since new ownership. Staff was friendly and quick service. Everything looked nice. Unfortunately, the Ham & Cheese croissant had no cheese inside only a little sprinkled on top. The chocolate croissant was overbaked and the chocolate inside didn't taste great. I was Was expecting a rich sweet tasting chocolate like it used to be. The caramel latte was far from great. Taster bitter and couldn't even taste the caramel. I'll try again in the future but needless to say was disappointed.

We love Edelweiss Bakery in Prior Lake, so when it came time to order a small wedding cake, my first thought was of them. I worked closely with Laurie, the owner, to create something we would love. We wanted chocolate upon chocolate with candy and chocolate covered strawberries. We also wanted pretty. And wow did Edelweiss deliver! We were thrilled with how pretty it was, going over every detail and ooo-ing and ah-ing before our meal was over and it was time to dig in.
The cake was moist and the frosting not too sweet, creamy and delicious. The chocolate covered strawberries on top were beautiful and very tasty and the other pieces of candy were wonderful too. There were many yummy noises at the table while we were devouring it. I can't recommend Edelweiss Bakery in Prior Lake more highly. Loved working with them on this and love this little piece of bakery heaven in our town. Thank you!

Yum! Breakfast sandwiches here are great! We loved the croissants and strawberry pop tarts, too. This place is small and casual, and the perfect place to have a filling breakfast or sweet treat if you don't feel like getting dressed up or don't want to spend a ton or cash. We will definitely back. I'd love to order a cake here for our next bday celebration. They looked delicious!

Place is cozy and is a nice little quite spot. But I do notice the exterior cleanliness is being ignored. that main street could look really pretty if these owners would keep them cleaned and maintained. Plenty of local companies to do it too. Look at these pictures. imagine it cleaned and back to a maintained condition the colors would pop and walking down there would be nostalgic.

Although the line was out the door it was worth the wait. I ordered the French Toast with a side of bacon and it was perfect. The regular black coffee was great as well, which I appreciate a quality blend. The only reason I went 4 stars is that I was underwhelmed by the cream cheese danish, which is one of my favorite pastries. I just didn't think it distinguished itself enough from bakery quality to almost grocery store. Overall, great experience nice staff and quick service.

I am so Thankful for this bakery. I'm a sucker for boulangerie's! I have found a bakery that sells amazing french pastries as well as american donuts, cookies, bars, etc. They also sell coffee drinks, assorted breads and breakfast sandwiches. I love that it's close to Lakeville and I don't have to drive into the cities for amazing baked gooThe outside is adorable.
The prices are average if not cheaper than other bakeries of it's equal. It's located downtown and there's off street parking and a small parking lot in the back. I highly suggest this place.

A delightful bakery in the middle of downtown Prior Lake. Coffees, pastries, breakfast sandwiches, cakes, quiches, need I say more? They have all wonderful offerings a cozy bakery should and the most beautiful display case of all of their sugary goodness. We scratched the surface with a maple long John (the maple was so so good and the donut a perfect density, soft and flavorful) and a lemon danish which had the perfect lemony zest and crust to filling ratio. Their light roast coffee was a perfect complement and notable for takeout on its own and I indulged in an iced almond milk almond latte - yum!

Love this little spot. I gave them only 3 stars because they are a bit spendy. One breakfast sandwich that comes without sides, husband had a danish and cup of coffee and the total was $20.00. I barely ate the sandwich as it was just okay. They also charge for a refill on coffee (just so you know. I mean it's only.25 cents but no one does that) Now, the space is lovely especially if you sit in the back.
They have a community table which is fun as well. I still love coming here as it's just a cozy small town feel. They do have lots of fun treats and make their granola fresh. Weekends the lines are long which always makes me happy. I like to see a local biz do well
